Grown under a natural shade canopy of other crops, such as false bananas, farmers are dedicated to sustainable farming practices using only organic fertiliser at the base of their trees.
Ripe red Cherry is carefully hand-harvested; the Cherry is then floated in water tanks and separated by density and quality, with the floaters (under-ripes) removed. The parchment is then de-pulped mechanically, rewashed, and fermented in water once more before being moved to raised beds to sun dry, usually for 10-14 days. On the beds, the coffee is agitated regularly to ensure even drying and the desired moisture content, which is checked at intervals. The coffee is then packed and transported to a dry mill near Addis Ababa to be prepared for export.
